Using frozen coconut.

Coconut Pound Cake — Vivian
6 eggs, room temperature
1 cup shortening and 1/2 cup margarine
3 cups sugar
3 cups flour (I use cake flour)
1 tsp. almond extract
1 tsp. coconut extract
1 cup milk
1 pkg. frozen fresh coconut (thawed)
Yesterdish suggestion:: Bake for about hour and 20 minutes at 325 degrees.
