Hot Milk Cake

With butter and vanilla.

Hot Milk Cake

4 eggs
2 cups sugar
1 teaspoon vanilla
2 cups unsifted plain flour
2 teaspoons baking powder
pinch salt
1 cup milk
1 stick butter or margarine

Beat eggs until light and lemon colored, gradually adding sugar. Continue beating. Add vanilla. Meanwhile, sift together flour, baking powder, and salt. Heat milk and butter or margarine until milk is hot and butter is melted.

Add flour mixture to egg mixture and blend. Stir in hot milk and butter. Blend together quickly and pour into greased and floured 9-inch cake pans lined with wax paper. Bake in a 375 deg. oven for 25 minutes or until cake tests done.
