Canned Fruit Muffins

For canned pears, or peaches, or fruit cocktail.

Working from a hotel room on a very old tablet–please excuse any shortcomings today…

From a box sold in Martinez, California.

Canned Fruit Muffins

2-1/4 c. oat bran cereal
1 Tbsp. baking powder
1/4 c. raisins
2 T. vegetable oil
1 c. evaporated skim milk
2 egg whites
1 (16 oz.) pears, drained [reserve liquid]

Preheat 425 deg.

Mix dry ingredients in a bowl. Mix together all other ingredients except pears. Add liquid mixture to dry ingredients and mix.

Chop pears fine; add to batter. If dry, add a little of drained fluid. Line muffin pan with baking cups. Bake 17 minutes.

You could use peaches–fruit cocktail, etc. Canned or fresh.
