With oat bran cereal and canned pineapple.
From a box sold in Martinez, California.
2-1/4 c. oat bran cereal
1/4 c. brown sugar
1 T. baking powder
1/2 c. evaporated skim milk or skim milk
2 cans crushed pineapple in own juice
2 egg whites (or 2 ounces of egg substitute)
2 T. vegetable oil
Preheat oven 425 deg.
Mix dry ingredients in large bowl. Mix milk, 1 can crushed pineapple with juice, egg white, and oil in bowl or blender. Combine ingredients and mix.
Drain the second can of pineapple and add to mixture. Line muffin pans with paper baking cups. Bake 17 minutes. Makes 12.
