Lemon Muffins

Graham flour optional.

From a box sold in River Forest, Illinois.

Lemon Muffins

2 cups sifted flour
3 Tablespoons sugar
3 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda, if you use wheat flour or Graham cracker flour
1 egg
1/2 cup raisins
1 teaspoon ginger
1 teaspoon lemon rind
1/3 cup butter or oil
1 cup milk

Mix all ingredients after butter has been creamed with sugar. Bake 400 deg. oven.

Baked it at 375 deg.–use 1/2 cup of Graham flour and 1-1/2 cups white flour.
