Pumpkin Bread

With nuts and raisins.

Pumpkin Bread

2/3 c. shortening
2-2/3 c. sugar
4 eggs
2 c. pumpkin
3-1/3 c. flour
2 tsp. soda
1 tsp. baking powder
1-1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
2/3 c. water
2/3 c. raisins or currants
2/3 c. nuts

Bake at 350 deg. about 1 hour
Makes 3 loaves

Pumpkin Bread method (provided by Yesterdish)

  1. Grease three 9″ by 5″ loaf pans.
  2. Sift or whisk together flour, ground cloves, cinnamon, baking powder, and baking soda. Set aside.
  3. Cream together sugar and shortening; mix eggs, water, and pumpkin into creamed mixture.
  4. Once the eggs and pumpkin are fully incorporated, stir in the sifted dry ingredients.
  5. Fold in the nuts and raisins or currants. Bake as directed.
