A meatloaf-like version with a tomato glaze.
A family recipe provided by Jennifer Kiel of Washington, DC, from her mother-in-law’s collection, started in Kent, Ohio.
Holiday Ham Ring
Mix this a few days early and freeze it.
3 lbs. ground smoked ham
1 lb. ground pork
1-3/4 cups graham cracker crumbs
1-1/2 cups milk
1/2 tsp. ground allspice
Sauce (recipe follows)
Sauce: combine 1 can condensed tomato soup, 1/2 c. vinegar, 1/2 c. brown sugar, 1-1/2 tsp. prepared mustard.
Combine ingredients, except sauce; mix well. In a 16 x 11″ baking pan, shape with hands into a ring (or loaf) about 10″ across. Pour over half the sauce. Bake at 350 degrees for 45 minutes. Pour over remaining sauce; bake 45 minutes longer, basting several times with sauce. Makes 12 to 14 servings. In the middle of the ham ring, place a bowl of whole cranberry sauce or cranberry relish.
