I could tell you I haven’t been singing “Secret Aaaaaagent Ham!” while retyping this. But that would be a lie. ’cause you know, it’s undercover and stuff.
A family recipe provided by Jennifer Kiel of Washington, DC, from her mother-in-law’s collection, started in Kent, Ohio.
Undercover Ham Casserole
2 cups cubed cooked ham
2 Tbsp. butter or margarine
1/4 cup chopped onion
1 can condensed cream of mushroom soup
1/2 cup milk
1/4 tsp. pepper
1/4 tsp. paprika
1 tsp. Worcestershire sauce
1 cup shredded cheddar cheese
2 cups hot mashed potatoes
Melt butter in saucepan. Add onion; cook about 5 minutes. Add ham. Blend in soup and milk. Stir in pepper, paprika and Worchestershire sauce; blend in cheese. Pour into a 1 1/2 qt. casserole, buttered. Spoon mashed potatoes on ham mixture. Bake in a 350 degree oven 15 to 20 minutes until potatoes are lightly browned. Serve hot.
