Broccoli Soup

“Good as a side with Fish Sandwich.”

From a box sold in Adams, Minnesota, with ephemera from Ohio.

Broccoli Soup — (1 quart)

2 Tbsp. butter or margarine
3/4 c. chopped celery (also leaves)
1/4 c. chopped onion — cook gently until wilted, then add
1 bunch (about 1-1/2 lb.) broccoli, cut into small pieces
2 c. chicken or beef broth
1/2 tsp. salt
1/4 tsp. pepper

Bring to a boil, cover, and simmer for about 20 minutes or until tender.

Puree, then add 1 c. milk and heat to warm.

If thicker than you like, add broth or milk and correct seasoning. (Good as a side with Fish Sandwich.)
