Chicken Loaf

With rice and pimento.

Chicken Loaf

3 cups diced chicken (cooked)
2 cups fresh bread crumbs
1 cup cooked rice
1/4 cup chopped pimento
3 cups milk
1 tsp. salt
4 eggs, beaten well

Mix ingredients in order given. Pack in buttered loaf mold–set in pan of H20 and bake 325 deg for 1 hour–serve hot with tomato sauce.

Serves 8.
