Potato Pudding

With onion and butter.

Potato Pudding

6 large potatoes (grated)
1 yellow onion (grated)
4 Tablespoons cracker meal
2 egg yolks (beaten)
2 tsp. butter
1 tsp. baking powder
1/2 tsp. salt
2 stiff egg whites

Grate potatoes–add grated onion and egg yolks, cracker meal, salt, baking powder, and butter. Mix well.

Fold in stiff egg whites. Top with 2 tsp. butter.

Bake 275 deg. for 1 hour.
