Pumpkin Soup

Made with evaporated milk.

From a box sold in East Moline, Illinois.

Pumpkin Soup

1 small onion, chopped
1 tsp. oil
2 c. chicken broth
1-1/2 c. pumpkin
1 Tbsp. lemon juice
1 tsp. curry
1 tsp. sugar
1/2 tsp. salt
1/2 c. evaporated milk

Saute onion. Add broth, pumpkin, lemon, curry, sugar, salt and pepper.

Boil. Reduce heat. Simmer 15 minutes.

Add evaporated milk and heat.
