Sausage Stew

With potatoes, onions and oregano.

Sausage Stew

4 c. celery, cut in 1-1/2″ pieces
8 medium potatoes, pared and quartered
2 medium onions, sliced
2 T. olive or cooking oil
1-1/2 t. salt
Dash pepper
2 t. dried oregano, crushed
2 lbs. Italian sausage links, cut in 1-1/2″ pieces

In large mixing bowl, combine celery, potatoes, and onions; sprinkle with oil, salt, pepper, and oregano; stir gently to coat. Arrange vegetables and sauasage in a 13 x 9 x 2″ baking dish; cover with foil and bake in 400 degree oven for 55 to 60 minutes or until vegetables are done.

With slotted spoon, remove to serving dish. Makes 8 servings.
