Zucchini Bread 2

With nuts, vanilla, and allspice. The first recipe for zucchini bread in this box is here.

Zucchini Bread

3 eggs
2 c. sugar
1 t. salt
1 t. vanilla
1 t. baking soda
1 c. oil
2 c. zucchini, grated with peel
3 c. flour
1 c. nuts (chopped)
1/2 t. allspice

1 c. coconut
1 c. crushed pineapple

Beat eggs; add oil, sugar, allspice, and one cup flour with salt and add soda, zucchini, and rest of flour and beat till well blended. Add vanilla, nuts, and optionals. Bake in loaf pans for 1 hour or until knife comes out clean at 325 deg.
