Zucchini Bread
2 c. sugar
3 eggs well beaten
1 c. vegetable oil
2 tsp. cinnamon
1 Tbsp. vanilla
2 heaping cups of raw zucchini, grated
2-1/4 c. flour
2 tsp. baking soda
1 c. chopped nuts (optional) [repeated in original recipe]
Do not peel zucchini and don’t grate too fine. Beat all ingredients well. Bake at 350 deg. for 1 hour and 10 minutes in well-greased and floured pans.
Makes 3 medium or 2 large loafs.
