Salmon Loaf

Like salmon cakes you can slice.

Salmon Loaf

1 large can salmon
1 c. bread crumbs
1 t. grated onion
2 T. cheese (Parmesan)
2 T. lemon juice
1 c. cottage cheese
2 eggs
Salt and pepper to taste

Mash salmon, including juice. Add lightly to beaten eggs, then other ingredients. Bake in loaf pan 30 minutes at 400 degrees. Serves 6.
