Raisin Pie

Another mention of seedless raisins.
This is a pie I’ve honestly never seen, let alone tried.

From a box sold in San Antonio, Texas.

Raisin Pie

3 c. seedless raisins
3 c. hot water
1/2 t. grated lemon rind
2/3 c. sugar
3 T. flour
1/4 t. cinnamon
1 T. butter or oleo

Line 9″ pie plate with pastry. Boil raisins, water and lemon rind together for 3 minutes. (over)

Combine the sugar, flour and cinnamon; add a little of the juice from the raisins and cook together until clear, about 5 minutes, stirring frequently. Add butter and cool. Pour into the lined pie plate. Top crust–whole or lattice. Bake in hot oven 425 deg. for 30-40 minutes or until brown.
