Zucchini Patties

Zucchini Patties

1 zucchini squash, cubed; cook in boiling water until tender, drain and mash.

Stir in:

  • 1-1/4 c. cracker crumbs
  • 1-1/4 c. shredded cheese
  • 2 Tbsp. parsley
  • 1/9 tsp. pepper
  • 1 clove garlic, minced
  • medium onion
  • 1/2 tsp. salt
  • 2 beaten eggs

Shape into patties; fry to golden brown each side.
