Sandwich Spread

With cucumbers, onions, and peppers.

Sandwich Spread

Put through food chopper:

  • 14 cucumbers
  • 1 qt. onions
  • 3 red peppers
  • 3 green peppers

Add 1/2 cup salt and let stand overnight. Drain. Add scalding vinegar and drain again.


  • 1/2 cup butter
  • 3 tablespoons flour
  • 1 level teaspoon dry mustard
  • 1 teaspoon celery seed
  • 1 cup vinegar
  • 3/4 cup sugar

Cook until thick; add 1 cup cream. Heat chopped mixture in this sauce to boiling point; can and seal tight.
