Steps in Cold Pack Canning

Don’t use these instructions. If you want to try canning, use modern instructions like these.

Steps for Cold Pack Canning

  1. Grade product.
  2. Wash product.
  3. Blanch vegetables and hard fruit, [large?] blackberries or small fruit.
  4. Plunge product into cold water. This is called “The cold dip.”
  5. Remove skins.
  6. Pack in clean jars that have been tested.
  7. To fruit add syrup. To vegetables hot water and 1 tsp. acid to each quart.
  8. Adjust rubbers and covers.
  9. Partially tighten cover.
  10. Sterilize or “process product to reduce time.”
  11. Remove jar from boiling water.
  12. Tighten cover of jar.
  13. Invert to cool.
