A recipe starting with solid fat.

Muffins
2 c. flour
3 tsp. baking powder
2 Tbsp. sugar
1/2 tsp. salt
1 egg
2 Tbsp. fat
1 c. milk
- Mix and sift dry ingredients.
- Separate egg and beat yolk slightly and white to a stiff froth.
- Add milk to beaten yolk.
- Add milk and egg mixture gradually to the dry ingredients.
- Melt fat and add to the mixture.
- Fold in stiffly beaten egg white.
- Bake in buttered muffin man, 25 minutes.
- Use a moderate oven.
