Muffins

A recipe starting with solid fat.

From the box of C.N. sold in De Soto, Kansas.

Muffins

2 c. flour
3 tsp. baking powder
2 Tbsp. sugar
1/2 tsp. salt
1 egg
2 Tbsp. fat
1 c. milk

  1. Mix and sift dry ingredients.
  2. Separate egg and beat yolk slightly and white to a stiff froth.
  3. Add milk to beaten yolk.
  4. Add milk and egg mixture gradually to the dry ingredients.
  5. Melt fat and add to the mixture.
  6. Fold in stiffly beaten egg white.
  7. Bake in buttered muffin man, 25 minutes.
  8. Use a moderate oven.
