Strawberry Pizza

There are really two schools of thought on strawberry pizza.

The first plays with the balance between sweet and savory and uses a pizza crust, usually with Nutella spread on it, and sliced strawberries on top of that. This is the second kind, which is really just a flattened strawberry glaze pie.

Here’s a version from the October 9, 1960 edition of The Rocky Mount (North Carolina) Evening Telegram, where it was suggested as part of a hypothetical futuristic dinner set in 1970 (because surely, we’ll all be eating on the moon by then):

Strawberry Moon Dessert Pizza

1 package golden pie crust mix or sticks
1 package (16 oz.) frozen sliced strawberries, thawed
1 package (8 oz.) softened cream cheese
3/4 cup sugar
2 unbeaten eggs
3 tablespoons lemon juice
1-1/2 tablespoons cornstarch

Drain strawberries; reserve juice. Prepare pastry for two-crust pie as directed on package. Roll out to a circle 1-inch larger than 14-inch pizza pan. Fit loosely into pan; trim pastry at top edge. Prick generously with fork and bake at 450 degrees for 8 to 10 minutes until golden brown. Cool.

Blend cream cheese and 1/2 cup sugar in small mixer bowl until smooth; add eggs, one at a time, beating well after each. Blend in 2 tablespoons of the lemon juice and turn into cooled pizza shell.

Bake at 350 degrees for 10 to 12 minutes until center is almost set. Cool thoroughly.

Combine remaining sugar and cornstarch in saucepan. Gradually add reserved strawberry juice plus enough water to make 1 cup. Cook over medium heat, stirring constantly, until thick and clear. Stir in remaining lemon juice and cool to lukewarm. Fold in strawberries and cool thoroughly. Spread on cooled filling. Chill until set, 3 to 4 hours, before serving. Serves 8 to 12.

You can make your own pizza pan by cutting a 16-inch circle of heavy-duty aluminum foil and folding up 1 inch all around to form a standing rim.

 
It was to be served with Cloud Seven Special Punch, which is regular punch with fluffy white frosting floating in it.

Strawberry Pizza

Crust:
1 cube margarine
1 T. powdered sugar
1 c. flour

Mix well and pat into 13″ pizza pan. Bake at 350 deg. for 10 minutes.

Filling:
8 oz. cream cheese
1 c. powdered sugar
1 t. vanilla
8 oz. Cool Whip

Combine first 3 ingredients; fold in Cool Whip. Spread over entire crust.

Glaze:
2 baskets strawberries
1 box Danish dessert glaze (strawberry flavor)
