Amazing Coconut Pie

Sometimes called impossible coconut pie.

Remember Ferna Mae Jones? We learned about her in the post for Make-Ahead Cocktail Meatballs. Her maiden name was Kafka. I haven’t figured out who lola is yet, though; so far, the best lead is that Lola is short for Dolores, and a Dolores Kafka was born in the 1920s to a family that was from Czechoslovakia two generations earlier. But I can’t confirm that’s our lola yet, so I’ll keep working.

Amazing Coconut Pie

Two cups milk
3/4 cup sugar
1/2 cup biscuit mix
four eggs
1/4 cup butter
1-1/2 tsp. vanilla
1 cup Angel Flake coconut

Combine all ingredients except coconut in blender on low speed for 3 minutes. Pour into greased 9″ pie pan (deep one). Let stand 5 minutes, then sprinkle with coconut. Bake at 350 deg. for 40 minutes.
