Oatmeal Pie

Not that kind of oatmeal pie; a normal pie with coconut and oatmeal.

I haven’t been able to determine the exact dimensions of a “cube of oleo”–though I suppose it’s probably the shorter sticks they use on the West Coast–but I do know the weight is the same as a stick of margarine or butter, a quarter-pound.

Oatmeal Pie

3 eggs, beaten
1/2 c. coconut
1 tsp. vanilla
1 c. dark Karo syrup
3/4 c. sugar
34/ c. uncooked oats (3 minutes)
1 cube of oleo
1/4 tsp. salt

Mix and pour into unbaked shell. Bake at 400 degrees 15 minutes. Reduce to 350 degrees; bake 35 to 40 minutes.
