Shrimp Tempura

With yellow food coloring.

Generally speaking, tempura batter is made from flour, cornstarch, baking powder, egg and water, and it’s the egg yolk that turns the batter yellow. But this is another option.

Shrimp Tempura

1 c. sifted flour
2 t. baking powder
2 t. sugar
1 t. salt
3/4 c. water
3-4 drops yellow food coloring

Mix above ingredients to make tempura batter. Use 2 lbs. shrimp. Peel off shell except tail so you will have something to hold on to while you are eating it.

Slit it down center so shrimp is like a fan. Dip shrimp in batter then deep fry in oil to brown.
