There’s actually a long tradition of condiments made from fruit, except it belongs to ketchup. Early ketchups included banana, anchovy, and blueberry. Tomatoes ultimately won our hearts, but we add sugar (or in the case of most commercial ketchup, high fructose corn syrup) to them, while bananas are plenty sweet on their own. In fact, in most banana-flavored baked goods, you add the bananas to the sugar and mash them together into one sweet mass.

Banana Mayonnaise
Place a ripe banana in a bowl and mash with fork until free of lumps. Beat in two cups oil, a small quantity at a time, beating constantly. Add enough lemon juice to make creamy. Salt to taste.
