Waffles

Double light, with enough butter to be crisp.

We discussed a little bit about the different methods for making waffles in the Waffles Divan recipe from Cedar Falls, Iowa. This recipe takes advantage of two methods of leavening: baking powder and the air in egg whites.

Waffles

1-1/2 c. flour 1-3/4 c.
1/2 tsp. salt
3 tsp. baking powder
1 c. milk 1-1/4 c.
2 egg yolks
1 Tbsp. melted butter 1/2 c.

Beat egg whites and fold in last.
