A family recipe provided by Jennifer Kiel of Washington, DC, from her mother-in-law’s collection, started in Kent, Ohio.
Gentlemen’s Choice Fondue
1 envelope onion soup mix
1 can or bottle (12 oz.) beer
1/2 lb. Cheddar cheese, shredded (2 cups)
1/2 lb. natural Swiss cheese, shredded (2 cups)
2 Tbsp. flour
French bread or rye bread cut into bite sized pieces.
In a medium sauce pan, combine soup mix and beer. Heat slowly. In another bowl combine the shredded cheese with the flour. When the beer begins to simmer, add a small portion of the floured cheese and stir constantly until the cheese is melted. Continue to add cheese gradually, stirring constantly, making sure each addition is melted. Serve as above.
Heat thoroughly. Transfer to fondue pot. Makes 4 cups.
Serve with cubes of cooked turkey, ham or roast beef; pumpernickel, rye or French bread, cauliflowerets, green pepper squares, cherry tomatoes or cucumber spears.
