Beau Monde is a specific brand of seasoning salt. The predominant flavors are nutmeg, mace, clove, allspice, white pepper and celery salt.
It’s a little strange that the recipe uses dill seeds, which are sort of like caraway seeds that taste slightly of dill. Most recipes I’ve seen for this use fresh dill weed. But I can see why, if you used dill seed, it’d go well with pumpernickel. Just be sure to toast and cool the seeds separately before mixing them in for maximum flavor.

Beau Monde
1 (6 oz.) sour cream
8 oz. mayonnaise
2 top. beau monde (Spice Island)
1/2 cup fresh parsley
2 T. green onion
2 tsp. dill seed
Mix ingredients and let set for 1 1/2 hours. Serve with black (pumpernickel) bread. Home made preferably.
Beau Monde spice is very hard to find these days, but I recently found it on Amazon. It’s more expensive through Amazon, but you can order 3 or more bottles together and have it on hold for awhile. Beau Monde is used in place of celery salt(used in place of Beau Monde, if unavailable. I don’t use green onion. I use dill weed, not seed. I always end up adding extra of each spices(all) to taste, so you can use as much or as little as you like, according to your own taste. If I use onion flakes, I lightly toastthem in a single layer on a cookie sheet, under the broiler (make sure to keep an eye on it, otherwise you could end up with burnt flakes! Toasting the flakes, brings out the flavor more.
You can easily make this dip a day ahead, but add a little extra dill and whatever else I feel it needs. Stir well and enjoy!
