Pepper Hash

I’d love to have this on a sandwich!

From a box sold in San Antonio, Texas.

Pepper Hash

12 large onions
12 green peppers
12 red peppers
1 large cabbage
1 cups sugar
4 Tablespoons salt
2 quarts vinegar, sometimes more

Grind onion, pepper + cabbage. [Something?] cover with boiling water. Boil ten minutes; drain. Add the other ingredients and boil till tender, put in jars + seal.

Yesterdish reminder: “Put in jars + seal” should be read as “put in jars + seal according to modern sanitation practices for home canning,” natch.
