Weirdly enough, freezing cabbage has the same effect as blanching it. The damage done by the formation of ice crystal is basically the same as the damage done by the blanching.
From a box sold in San Antonio, Texas.
1 head cabbage, chopped fine
1 tsp. salt
Let stand one hour.
- 1 medium onionc hopped
- 1 green pepper chopped
- carrot and celery, as desired
- 2 cups sugar
- 1 cup vinegar
- 1/2 cup water
- 1 tsp. celery and mustard seed
Boil together one minute–cool, then pour through strainer and over cabbage mixture.
Pack in freezer containers and freeze. (Ziploc bags good to use.)
Keep frozen until ready to use. 3-4 hours defrost.
