Oatmeal Cake

With broiled pecan frosting.

From the box of J.L. from Westborough, Massachusetts.

Oatmeal Cake

1 c. oatmeal
1-1/2 c. boiling H20 — pour over oats and let stand 20 minutes.

Cream:

  • 1/2 c. shortening
  • 1 c. brown sugar
  • 1 c. white sugar

Add:
Oatmeal mixture
1-1/3 c. flour
1 tsp. cinnamon
1 tsp. soda
1/2 tsp. salt

Bake 25 minutes at 350 deg. in 9 x 13 pan.

Topping

6 Tbsp. melted butter
1/4 c. canned milk
1 c. pecans
1/2 c. brown sugar
1/2 tsp. vanilla

Spread on baked cake and broil a few minutes.
