Zucchini Bread
2 eggs
1/2 cup oil
1/2 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. vanilla
1/2 cup walnuts
3/4 cup sugar
1-1/2 cups flour-sifted
1 cup grated zucchini
1/4 tsp. baking powder
1/2 tsp. salt
Mix eggs, stir in sugar, oil, and zucchini. Mix dry ingredients and nuts. Bake for 1 hour in 350 deg. oven. (This freezes well also.)
(One big zucchini will make 2 loaves.)
