Date Pecan Balls

With vanilla and meringue.

From the box of Evia Marie Sands of Louisville, Kentucky.

Date Pecan Balls

Cut in small pieces:

  • 1 lb. dates
  • 2 cups pecans

Add and mix thoroughly:

  • 1 cup white sugar
  • 1 tsp. vanilla

2 egg whites, beaten stiff; add 1/4 tsp. baking powder and beat a little more to blend.

Add egg whites to first mixture and fold over and over until completely mixed. Drop from teaspoon and form into small balls with fingers. Bake on ungreased cookie sheet; remove from sheet while hot.

Temperature, 325 deg. Time, 30-35 minutes.

Amount, approximately 60 cookies.
