From the box of Evia Marie Sands of Louisville, Kentucky.
1 cup flour
1 tsp. baking powder
1 tsp. salt
1 tsp. sugar
1 cup cornmeal
1 egg slightly beaten
1 cup milk
Sift flour; add baking powder, salt, and sugar; sift again and add cornmeal. Mix thoroughly.
Combine eggs, milk, and pour into flour mixture and stir just enough to moisten the dry ingredients. Do not beat.
Turn info a greased pan and bake in a hot oven about 40 minutes. (Put enough grease in muffin pan to have some to pour in cornbread mixture.)
