Baked Custard

With vanilla or nutmeg.

From the box of C.N. from De Soto, Kansas.

Baked Custard

2 c. scalded milk
2 eggs (good size)
1/4 c. sugar
1/8 tsp. salt
1 tsp. vanilla or grating of nutmeg

  1. Scald milk in double boiler.
  2. Beat egg slightly and add sugar.
  3. Add scalded milk to egg and sugar.
    [NOTE: let the milk cool after scalding.]
  4. Add flavoring.
  5. Stiur until sugar is dissolved.
  6. Pour into cups or one large baking dish.
  7. Grate a little nutmeg on top.
  8. Set baking dish in hot water.
  9. Bake in a moderate oven until a knife piercing it will come out clean.
  10. Do not allow the water in the pan to boil.

4 servings.
