Chicken Green Bean Casserole

I’m sure it’d work with turkey, if you happened to have any leftovers.

Barbara Brelsford was born Barbara Craven in Summerfield, Kansas in 1924, the daughter of a homemaker and the assistant manager of a grain elevator.

She met Clifford Brelsford in the fourth grade. Clifford was a pilot with the Flying Tigers in World War II (essentially subcontracted U.S. military personnel defending China from Japan); Barbara earned degrees in home economics and nursing. The two married in 1948 before she and Clifford moved to Aspen, where they owned a motel and Barbara worked as a nurse in a clinic.

The Brelsfords likely met F.J. after they retired and moved to Sun City in 1978. Barbara kept active in charity work and volunteered in hospice care for 20 years. The pair remained married for the rest of their lives. She passed in 2007, and Clifford in 2011, leaving two daughters, two grandchildren, and two great-grandchildren.

Chicken Green Bean Casserole

3 c. chicken, cooked and diced
2 cans French style green beans

Blend together the following for sauce:
1 c. milk
1/2 t. salt
1/2 c. grated Parmesan cheese
8 oz. cream cheese
1/2 t. garlic salt

Butter casserole layer chicken and green beans.

Pour sauce over and add 1 can french-fried onion rings and 1/2 c. Parmesan cheese for topping. Bake 300 deg. covered 20 minutes and uncovered till browned.
