Whole Wheat Cookies

An attempt at a healthy cookie, with walnuts and raisins. And Butter Buds.

Butter Buds are a name brand of spray-dried, starch-coated butter extracts that are packaged for both home and industrial use. I’ve actually used Butter Buds and I’ve been impressed at how intense and accurate the flavor is.

But not as impressed as this girl, from their website.

That said, they make an excellent addition to a dredge for fried crawfish tails.

Whole Wheat Cookies

1-1/2 c. whole wheat flour
1/2 c. apple juice concentrate
1 pkg. Butter Buds
2 T. orange juice
1/2 c. vanilla
1/2 t. baking soda
1/2 t. cinnamon
2 egg whites
1 c. walnuts
1 c. golden raisins

Mix Butter Buds and apple juice concentrate until smooth. Beat in orange juice and vanilla.

Combine flour, baking soda, and cinnamon; add to creamed mixture alternately with beaten egg white.

Stir in nuts and raisins.

Drop by rounded teaspoonful onto greased baking pan. Bake 10 to 12 minutes. 375 deg.

2 dozen 2-inch cookies.
