Without sugar, for contrast.
I’d even go so far as to suggest putting chopped-up bacon in these to create a starker contrast to the sweetness of syrup.

Griddle Cakes
Ingredients:
1 c. flour
1/2 t. salt
1/2 t. baking powder
[Repeated; omit the second 1/2 t. salt]
1 c. sour milk
2 t. melted butter
Method:
Pour sour milk in bowl and add soda. Add the liquid to the flour a little at a time. Beat well and add melted butter.
Add a little fat to the griddle and drop batter by spoonfuls on the hot griddle.
Sweet milk may be used with one teaspoon of baking powder.
