Soy Carob Fudge

Soy cream is a dairy cream substitute.

From a box sold in Chicago, Illinois.


2 rounded cups raw sugar
1 rounding Tbsp. carob meal
1 Tbsp. honey
1/2 cup soy cream
1/2 cup black walnuts
2 tsp. vanilla
pinch of salt

Mix all together while cold, then boil until forms a ball in water. Remove immediately from fire. Add nuts cut fine. Beat until it begins to stiffen but will still run onto the platter smoothly.

This can be made without the carob meal.
