Cherry Coconut Ice Cream Pie

The cherry mix this calls for has pineapple in it. The recipe for frozen cherry mix is here, but you have options. You could use cherry pineapple sauce if you want to stay in the same recipe collection, or pineapple sundae sauce from Michigan mixed with a can of cherry pie filling.

Cherry Coconut Ice Cream Pie

1-1/3 cups flaked coconut
2 Tbsp. butter, melted
1/4 cup graham cracker crumbs
2 Tbsp. sugar
1 qt. vanilla ice cream
1 cup cherry mix

Combine coconut and butter and mix well. Add crumbs and sugar, mixing well. Press firmly on sides and bottom of an 8″ pie pan. Bake at 375 degrees 10 to 12 minutes, or until lightly browned. Cool. Soften ice cream and spread in pie shell. Spread Cherry Mix over the top and freeze.
