Picnic Chicken Loaf
2 cups chopped cooked chicken
1 cup bread crumbs
1 1/2 Tbsp. butter or chicken fat
1/2 c. milk
2 eggs
1 chopped green pepper
1 small chopped onion
Heat milk and moisten crumbs. Add chicken butter, beaten eggs, pepper and onion. Mix all together well and form into loaf.
Bake 45 minutes or until firm and brown. Serve cold and garnish with tomatoes or sliced cucumbers.
Cooked veal may be substituted for chicken.
