I’ve never tried anything like this. Although I grew up before the low-carb craze really hit the mainstream, I think I’d remember something like someone looking at a casserole dish with sixteen slices of cut-up bread in it and saying, “What this needs is bread crumbs on top.”

Breakfast Casserole
Butter a 9×13 pan.
8 slices of bread (remove crust)
cube ham or cut up link sausage (cook)
Layer meat on bread.
1 c. diced cheese – 8 more bread on top.
Mix: 6 eggs, 3 c. milk, 1/2 t. salt, 1/2 t. dry mustard. Pour over and set overnight.
Top with bread crubs, 1/2 c. melted butter. Bake uncovered, 1 hour — 350 deg.
