Impossible Coconut Pie

Pie makes its own crust!? But that’s imposs… I see what you did there.

From a box sold in Columbiaville, Michigan.

Impossible Coconut Pie (as written on the card)

4 eggs beaten until light
1 3/4th c. sug.
1/2 stick melted butter
2 c. milk
1/2 c. self-rising flour
1 c. shred. coconut (about 7 oz.)

Beat eggs until light; add the sug., milk, melted oleo + flour. Continue beating until very light.

Fold in coconut. Pour into 2 – 9″ pie pans. Don’t use a crust. Pie makes its own crust – a very thin one.

Grease pans + light flour them before adding mixture. Bake at 350 deg. – 25-35 min.

If substituting reg. flour, add 1/2 t. bak. powd. + pinch of salt.
