Butter Bean Casserole

I don’t see why you couldn’t use both the bacon and the hot dogs…

From a box sold in San Antonio, Texas.

Butter Bean Casserole

1 #303 can butter beans
1 T. butter
1 T. flour
1 T. brown sugar
1/2 t. salt
1/8 t. pepper
2 t. dry mustard
2 t. lemon juice
1/2 c. buttered crumbs
1/2 c. grated cheese
4-5 bacon strips or frankfurters

Drain beans, reserving liquid. Place beans in greased casserole. Heat butter over low heat; add flour and stir until blended. Slowly add 1/2 c. liquid stirring until smooth; cook over low heat until thickened.

Add brown sugar, salt, pepper, mustard and lemon juice. Pour sauce over beans. Sprinkle with buttered bread crumbs and grated cheese; arrange bacon or frankfurters on top.

Bake at 375 deg. for 25 to 35 minutes or until well browned.

Serves 4 to 5 persons.
