Fresh Apple Salad

Fresh Apple Salad

4 cups cored and diced apples
1 cup diced oranges (or canned orange segments)
1 cup diced pineapple, fresh or canned
1/2 cup green seedless grape halves
1/2 cup currants, raisins or dates
1 cup diced celery
lemon juice
1/2 cup chopped pecans

Dressing:
3 oz. pkg. cream cheese
2 to 3 T. pineapple juice
1/2 pint [whipping] cream
2 T. confectioners sugar

Mix fruits and celery together and and sprinkle with a little lemon juice. Add nuts. Beat softened cream cheese, add pineapple juice and beat in whipping cream till stiff. Sweeten with confectioners sugar. Before serving toss fruit mixture with enough dressing to moisten. Store remaining dressing in refrigerator. Keeps several days. 12 servings.
