Sauteed Zucchini

Sauteed Zucchini

1 Tablespoon vegetable oil in skillet and warm. Add 1 Tablespoon chopped onion — 4 medium zucchini (squash) washed and sliced (unreeled?) Add 2 to 4 Tablespoons water. Cook about 10 minutes until tender.

Blend in 1 teaspoon lemon juice (or some tomatoes). Add Salt if there is no sodium restriction.
