Blueberry Cheesecake

Blueberry Cheesecake

(Vanilla wafers to line pan.)

Beat till smooth:

  • 2 (8 oz.) pkg. cream cheese
  • 3/4 c. sugar
  • 2 eggs
  • 2 Tbsp. lemon
  • 1 Tbsp. vanilla

Line pan with 24 (or however many to cover pan) wafers. Pour mixture over vanilla wafers and bake 15 to 20 minutes at 325 degrees. After cooling, top with fruit. (Blueberry or cherry pie filling; 1 lb. 5 oz. can.)

I used a larger pan (10 x 14 inches) and 1-1/2 timesed the recipe. It was thicker, but I cut smaller (20) pieces.

When baking the cheesecake, do not overtake. You want it just to set firm.
