Forty doughnuts isn’t that many in a family of eight.
Here’s our likely Pauleen Ross in the 1940 census:
From a box sold in Christine, North Dakota.
Doughnuts
Ingredients:
1 c. sugar
7 Tbsp. melted lard
1 tsp. salt
1 tsp. vanilla
1 tsp. baking powder
1 tsp. baking soda
2 eggs
1-1/2 c. buttermilk
6 c.? flour
2-1/2 lbs. lard
1 c. sugar
7 Tbsp. melted lard
1 tsp. salt
vanilla
2 eggs
Cream and beat above real well. (When lard is put in to heat as soon as enough melts take out 7 Tbsp. so it’s not too hot.)
Sift 6 c.? flour. Measure out two cups and sift with:
1 tsp. baking powder
1 tsp. baking soda
Add flour.
Mix 1-1/2 c. buttermilk alternately to creamed mixture. Turn onto floured board. Knead until not sticky. Roll out to 1/2 inch thickness. Cut all before frying.
375 deg. Dip in glaze when all baked.
Glaze:
1 c. powdered sugar
1/2 c. boiling H20
1 tsp. vanilla
Heat until clear.
Serves: 40 Doughnuts.
