Roquefort Cream Dressing
2 Tablespoons crumbled Roquefort cheese
1/2 cup sour cream
1 teaspoon vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon chopped parsley
1/2 teaspoon dried tarragon
Place cheese in bowl. Gradually add sour cream, remaining ingredients. Stir with a wooden spoon until well blended. Makes 4 servings.
Basic Roquefort Dressing
1 cup Roquefort Cheese
1 Tablespoon Worcestershire sauce
1 Tablespoon lemon juice
2/3 cup salad oil
2 Tablespoons vinegar
Mash cheese with a little salad oil. Add Worcestershire sauce, lemon juice, vinegar, and balance of oil. Shake well until creamy.
